What’s a Training Session Like?
Teressa invited Helpwise to observe a training session for two domestic helpers who work for the same client, a Hong Kong mother with two small children. Teressa’s training sessions are tailor-made based on her client’s household health goals, tastes, and preferences. Prior to the first training session, Teressa has a consultation with her client (the helpers’ employer, in this case) to understand her preferences and how she wanted to improve her life (health, stress, exercise, etc).
For this particular client, Teressa learned that they wanted a combination of cultures and cooking styles to be present in their meals, so she taught their helpers how to integrate western and Asian foods, traditional Chinese dishes, and raw foods into the family’s menu with a goal to balance that with a more plant-based diet. Teressa helped them create meals that catered to their taste buds and body constitutions.
By the time of our visit, Teressa had worked with her client and her helpers for around two months. This meant that Teressa could give the helpers more independence in the kitchen and could test their ability to manage the kitchen and plan the meal. The sessions were held in the client’s home, because it was important that the helpers learn how to prepare healthy dishes using the foods they already had home and that new concepts could be integrated into their existing cooking practices.
Cooking with Instincts
An immediate difference we observed between Teressa’s sessions and traditional cooking classes were the absence of printed recipes. Teressa explained that this was entirely intentional; she trains in sensory cooking and how to cook using instinct, not just by reading text on a paper. She believes that cooking should be an organic experience, where the components in the kitchen vary daily depending on the changing needs of family members or the availability of ingredients. Then, the domestic helpers can learn how to make decisions according to these variations.
The session begins with Teressa explaining the four dishes she envisioned using the ingredients she knows are available in the client’s kitchen on this day:
- Spiralized zucchini noodle avocado salad
- Red seaweed salad with cashew cheese
- Tumeric brown rice noodles with Chinese veggies
- Kalemato sweetatoe soup
These dishes were also planned according to the physical and emotional state of her client. The helpers are trained to understand food combination principles based on Traditional Chinese Medicine (TCM) to match the needs of the family members. Even the warm soup with ginger was designed specifically for several family members recovering from a cold that week.
Once the meal plans were discussed, the domestic helpers were encouraged to take ownership of the kitchen while Teressa guided the overall cooking process. She intermittently made small suggestions about the order of dish preparation or demonstrated a better way of mixing ingredients of a dish. Teressa told us that she initially provided more guidance in the kitchen during the first few training sessions with these two helpers, but over time the helpers were able to work with greater independence. Throughout the session, Teressa asked the helpers what they think they should do next, to help them think through how to make organic decisions themselves.
The Final Product
By the end of a 2-hour session, the helpers created a colorful display of dishes for lunch. Teressa explained that “eating all of the colors of the rainbow” is a fundamental tool she engrains into her students.
By teaching the helpers to incorporate various colors in their foods, Teressa says that it will naturally ensure that they include fresh produce, such as bright reds from vitamin C-rich bell peppers, verdant greens from fibrous leafy vegetables, and orange from beta carotene-rich sweet potatoes, which provide nutrition that boosts immune systems and supplies energy.
It was indeed a beautiful display of colors. And all the dishes tasted as good as it was for our bodies!
